Ukyou, of course, always shared space with Tarou as my favourite Ranma character back in the day, and I still like her quite a lot, even if I no longer feel that necessitates hating Ranma and Shampoo (thank god). There's a lot of interesting facets to Ukyou (like the fact everyone associated with her is a complete fricking weirdo even by Ranma standards), and quite a few unanswered questions about her as well (like what happened to her parents, for starters).
I've always thought it pretty funny that her popularity in North America is significantly greater than it was in Japan; it's arguable Ukyou and her giant-spatula are one of the most instantly recognisable symbols from Ranma 1/2 for North Americans.
For once, I don't really have any particular complaints about her portrayal in fanfiction; Ukyou might be the Ranma character with the greatest variety of portrayals; she's been done as extremely sympathetic and as a pure antagonist in almost equal measure, been made very cheerful and resilient and also incredibly angsty bordering on (sometimes not 'bordering') suicidal, as victim and victimiser, and everything in-between. The fun thing is almost all of this can be supported from the manga; the problem with Ukyou is never so much finding evidence to support your take on her, but trying to make your take encompass the whole of her character.
